(This is a small amount of liquid with which to cook your crepe filling).
-Havarti cheese shredded (or Ricotta cheese) – 2 tablespoons’ volume
-Chopped bacon (2 ounces)
-Flour (150 grams)
-1/4 liter of water
-1 egg
-0.3 ounces of butter (1 pat)
-Milk (1/8 liter)
-Nutmeg (ground)
-3 Toothpicks

This portion was just right for me: 1 person. But, this can be stretched for a 2 person portion.

Procedure:
1. Rinse, then chop your fresh spinach leaves (1.5 ounces).
2. In a saucepan or pot, heat 1/3 cup of water and 1 teaspoon vinegar (apple cider vinegar is best).
3. Add your chopped spinach, cheese, and 2 ounces of half-cooked bacon to the solution. (You can prep cook your bacon half-way in the microwave).
(With medium heat you will cook the spinach, cheese, and bacon).
Cover pot without added heat. Turn off the heat until you are ready to use filling for the stuffing of your crepes rolls.
4. You can use shredded Havarti or Ricotta. (The bacon must be room temperature (at least); and not frozen).
5. You don’t cook this on high heat, nor on for too long a heat exposure. The ingredients should simply be combined and cooked to tenderness.
(No more than approximately 5 minutes of cooking time on medium heat is desirable. Maximal time, ensures that your bacon is cooked.)

While that filling is cooking, you want to begin to fry your crepes (pancakes) on a separate range. You can use either oil or butter in the frying pan. While those cook, cover the stuffing pot and turn off the heat so your filling will not overcook.

The important thing to do with using the large surface frying pan is to make these pancakes thin, flat, and large.

For your crepes batter (whisk this before you heat your frying pan):
Combine 1/4 liter of water, 1 egg, and 150 grams of flour. (Whisk).

Ladle this mixture/batter into your medium-hot frying pan. Form them as thinly as possible.

You’re going to stack these done pancakes onto a plate, as each thin one is done frying. For this proportion, it’s about 3 pancakes that are made. As you plate each one, grind some fresh Nutmeg onto the top of each one that you stack.

Next: In a foiled baking dish to put into the oven, you’re going to flash-bake your rolled crepes. Now you can preheat the oven 400 degrees F.

Now: Fill each crepe roll, with your spinach filling. I find that each one can be rolled and secured with 1 toothpick per roll.

Take each rolled crepe, and position each into the buttered bake-pan. The total you will bake, is about 3 rolls. The pan only needs 0.3 ounces of butter (a pat) for pregreasing.

Bake your 3 crepe rolls in the 400 degree F preheated oven for no more than 10 minutes. Interrupt the baking after 4 minutes’ time, to pour 1/16th of a liter room temperature milk. (This is simply to keep the whole dish moist and milky).

Finish your baking time, and allow your crepes to cool. Serve with a little bit of course salt on-top, and enjoy.

This is a very flavorful meal to be had for lunch or for dinner.

If you’re in the mood for a most flavored (and savory) variant on the crepes dish, try this: “Spinach and bacon pancakes”.
